Quinoa Salad with Vegane Pesto Dressing

Preparation: 30 min | Baking: 20 min | Portions: 8

Ingredient

  • 1 cup white quinoa
  • 1/2 cup chopped garlic flower
  • 1 mango, chopped
  • 1/2 chopped onion
  • 1 1/2 cups mixed beans (canned)
  • 1 cup chopped cucumber
  • 1 cup chopped carrots
  • 3/4 cup of vegan yogurt
  • 3 tbsp. Hydro Culture Vegan Herbs 2 Pesto
  • 1/2 cup fresh mint

Preparation

  1. Boil 1 cup of white quinoa (yields 2 1/2 cups after cooking). 
  2. Let cool before adding 1/2 cup chopped garlic flower, 1 chopped mango, 1/2 chopped onion, 1 1/2 cups mixed beans (canned), 1 cup chopped cucumber and 1 cup chopped carrots.
  3. Prepare the dressing by mixing 3/4 cup of vegan yogurt with 3 tbsp. of Hydro Culture Pesto Vegane Herbs 2. 
  4. Mix well and add 1/2 cup chopped fresh mint before serving.
    Makes 8-10 servings
