Crazy Pasta Salad

Ingredient

125 g alfalfa sprouts Pousse Vert or alfalfa radish sprouts Pousse Vert

300 g of your favourite pasta (e.g., pennine)

1½ cups fresh tomatoes, cubed

1 zucchini, cut into quarters

1 small red onion, finely cut

Olive oil, as needed

Basil to taste

Italian parsley to taste

Salt and pepper to taste
Preparation
- Cook pasta.
- Meanwhile, cut tomatoes and zucchini, and finely chop red onion, parsley and basil.
- Mix everything in a large salad bowl and add sufficient olive oil.
- Once the pasta is cooked al dente, drain and pour into the bowl. Mix all ingredients until well blended.
- Allow mixture to cool slightly, and then add alfalfa sprouts.
- Season with salt and pepper to taste. Mix again.
